I made a cheesecake yesterday…a pumpkin cheesecake…this pumpkin cheesecake from Health magazine. It’s not very often I make a recipe found in a magazine, but I have a weakness for pumpkin cheesecake, so I had no choice in the matter.
It. Was. Heavenly.
I had my doubts, it being a lower calorie dessert and all. It also looks more like a pie than a cheesecake. I was oh so pleasantly surprised.
My initial plan was to make the cake, eat a slice for dessert, and freeze the rest as individual slices for whenever we felt the need to indulge. Well, there’s been a change of plan. We’ve decided to polish off this decadent cake/pie throughout the week - our lives will be much better off for doing so.
I snapped a few shots of my creation, but unfortunately those didn’t turn out quite as good as the cake. I clearly need more practice.
